Spinach Manicotti

Made this a couple nights ago. Definitely have to love spinach to like this :-) I'm actually not a huge fan (of spinach) but still like it!

SPINACH MANICOTTI

Ingredients
8 dried manicotti shells
1/4 cup sliced green onion (2)
1 clove garlic, minced
2 tablespoons butter or margarine
2 tablespoons all-purpose flour
11/3 cups milk
3 ounces process Swiss cheese, torn
1/3 cup chicken broth
1 beaten egg
1 10-ounce package frozen chopped spinach, thawed and well drained
3/4 cup ricotta cheese
1/2 cup grated Parmesan cheese
1/4 teaspoon finely shredded lemon peel

Directions
1. Cook manicotti according to package directions. Drain. Cool manicotti in a single layer on a piece of greased foil.

2. Meanwhile, for sauce, in a medium saucepan cook green onion and garlic in butter until tender. Stir in flour. Add milk all at once. Cook and stir until thickened and bubbly. Add Swiss cheese and broth, stirring until cheese melts.

3. For filling, in a medium bowl stir together egg, spinach, ricotta cheese, Parmesan cheese, and lemon peel. Use a small spoon to fill manicotti shells with filling. Arrange filled shells in a 2-quart rectangular baking dish. Pour sauce over filled shells.

4. Bake, covered, in a 350 degree F oven for 30 to 35 minutes or until heated through. Let stand for 10 minutes before serving.

5. Makes 4 servings

So I finished the hat and scarf for my co-worker! She was thrilled to get it which made me happy! I'm loving the hat and probably will make tons more now (not just of this particular pattern).

Priority Overnight

About 2 weeks ago I came home after a normal day at work and saw a package sitting on our front porch. I picked it up to see that it was a manilla envelope. Priority Overnight from the Dept of the Army.

Yep, you guessed right.

Mike wasn't home yet so I called to tell him what I just told you and he said "that can't be good" and asked me to open it. Inside was a letter with orders calling him back to active duty, "Operation Iraqi Freedom", for up to 400 days. He reports to duty on 11/2/08 and if he passes the physical with flying colors (he will), he will return to duty at his discharge rank of CPT. We have absolutely no other information.

For those of you that don't know, Mike served in the Army for approximately 4 years. He was in the 82nd Airborne and got out January 2006 to work for UPRR, where he is now.

This news has been quite a shock for us. Obviously when you're active duty you come to expect deployment and orders to move. He's been out for 2.5 years and though the possibility that this could happen has always been in the back of our minds, we never really thought it would happen. You're just not prepared for it.

So if you would all keep Mike in your prayers I would greatly appreciate it. He has no idea yet where he will go or for how long. So I'm hoping for the best. I have to admit that I'm not at all prepared for this. :)

I didn't share sooner because he hadn't had time to get the information to the appropriate people yet. I was a mess for the first few days and now am just hopeful.

Benefits

So I know that everyone hates dealing with insurance benefits. I do. But isn't it pretty much common knowledge at this point that EVERYTHING is increasing in price and don't you pretty much assume that medical insurance is going to be RIGHT ON TOP OF THAT?? Because if you don't, then well. You're just ignorant.

I didn't say it was fair or right. I'm just saying it's common knowledge. AND, if your company pays for almost all of your benefits anyway, I say you don't have a freakin right to complain about it in the first place. Especially if you're one of 2in the entire company that receive that benefit and everyone else has to fork out the money to deal with it. OH and especially when none of the people that actually pay for it complain about it.

In case you're wondering what the heck I'm talking about :D, it's open enrollment period for our company. And I'm IT. No really I am. And this year was so absolutely insane that I only had 2 days to put together all of the packets to distribute to all of our full time employees. And I'll only have 1 week to get them
back and enrolled.

So you might not hear from me again for another week. :-)

Actually I love my job and as hateful as I sounded above, I really love the benefits part of it. It just drives me crazy that the one complaint I have received came from someone who doesn't even pay for his own crap to begin with.

My friend/co-worker watched Dolce while we were gone and as usual someone else just came to the house to feed and play with the big dogs. Well Karen got some pretty hysterical pictures and videos of Dolce with his little girlfriends. So as soon as I get those they'll get posted. Can you imagine 3 hyper little dogs running around your house 24/7? lol I don't know how she did it, but it's hysterical!

LOTS of pictures. Mike got some pretty awesome shots in. I told him he needs to put his watermark on them.

So pretty much, in case any of you didn't stay up to date with the weather, we got dumped on. Hurricane Ike stormed right up through Indianapolis. So it rained off and on all day Friday, was sunny on Saturday so we got burned, and then POURED on Sunday with lots of high winds.

But it was a blast nonetheless!

Long Walk

I went for a walk with my friend Jill at the SC Marina this morning. She had the jogging stroller with baby Lucas and I had Dolce. It was still much warmer than we anticipated so it was fairly exhausting towards the end. (It's an hour walk) Dolce was so pooped near the end that he jumped right in to the bottom basket of the stroller and just rested! Is that not hilarious?? Jill and I were laughing so hard we couldn't even walk. He kept laying down in the middle of the path and Jill had shown him the basket earlier, he must have remembered it and kept walking between Jill and the stroller and when we stopped he jumped right in! He just curled right up and lifted his head looking around and enjoying the breeze.

Seriously hysterical! I wish I had a camera :-)

Crazy Weather

I realize that there is crazy weather all over the nation right now but the weather here is, well, INSANE.

So yesterday it was 95 degrees and today it was 50 with a forecast for snow. We'll see if there's snow when we wake up in the morning. I'm sure there'll be some in the mountains if we don't see it in our back yard.

Isn't that just ridiculous? SNOW!! ALREADY!! In case I haven't mentioned it a million times.... I. hate. snow. It's cold and it sucks to drive in.
